The Titus sardine contains long chains of amino acids that form different proteins. During the digestion and breakdown of proteins, smaller bioactive substances are formed, called peptides. They have good health effects. Protein content in fish represents 16-20% of total weight. According to protein regulations the content in fresh fish is around 17-19% but in dried fish the protein content is around 75-80%. Seafood contains peptides. Peptides are involved in releasing hormones, controlling blood sugar levels and metabolism in bones and nerves. By breaking down proteins through fermentation or hydrolysis, a peptide is formed. Seafood contains long chains of omega 3 fatty acids.
